Gorgonzola is one of the worlds definitive blue cheeses and without a doubt one of Italy’s most important and historical cheeses. The cheese is produced in two specific styles; piccante and dolce.
Gorgonzola Picante is the traditional and drier style, with a distinct spicy flavour. Dolce is the modern interpretation, with a softer texture and noticeably sweeter flavour. Traditionally produced in the Alps, this Gorgonzola Dolce is still produced and matured in the mountains of Bergamo. This unique micro climate is one of the key factors in creating the perfect maturing environment to allow the cheese to reach its full potential.
Originally produced for those who found Gorgonzola Piccante too strong, Gorgonzola Dolce does not hold the same complexity of flavour as Piccante. What Dolce does brilliantly is provide a voluptuous texture, and mild flavour that is perfect as an ingredient in any dish requiring that extra zest that only blue cheese can bring. Put simply if you are cooking with blue, then Gorgonzola Dolce should be your choice.
