Created in 1902 to celebrate the birth of Princess Mafalda, Mafaldine is a very Southern Italian shape of pasta. Resembling Octopus tentacles, Mafaldine is best served with ragu, sausage, cime di rapa and the likes.
It's handmade in Sydney using locally sourced, free range eggs and '00' flour direct from the NSW wheat belt in Dubbo (Ben Furney Milling).
Less than half the cooking time of dried pasta, this is some of the best commercially available fresh pasta anywhere in the country.
