Gorgonzola is one of the worlds definitive blue cheeses and without a doubt one of Italy’s most important and historical cheeses. The cheese is produced in two specific styles; piccante and dolce. Gorgonzola Piccante is the traditional and drier style, with a distinct spicy flavour. Dolce is the modern interpretation, with a softer texture and noticeably sweeter flavour.
Traditionally produced in the Alps, Gorgonzola Piccante is often referred to as ‘Mountain Gorgonzola’. This Gorgonzola is still produced and matured in the mountains of Bergamo. This unique micro climate is one of the key factors in creating the perfect maturing environment to allow the cheese to reach its full potential.
Matured for a minimum of three months, Gorgonzola Piccante’s is slightly crumbly, dense in texture with heavy bluing. Slightly acidic and spicy in flavour, Gorgonzola Picante is best served as a table cheese.
